Simply HQ’s Favourite Easter Lamb Recipe

Easter is a time to celebrate a new season and often the time to really treat your loved ones to a special meal. Buying the best quality meat you can will make this a whole other experience again. Try Troutsdale Farm’s Shropshires.

Approx 2.5kg leg of best quality British lamb
4 cloves of garlic sliced
Fresh rosemary
glug of olive oil
150ml red wine
300ml lamb stock
salt & pepper

Cooke your lamb for about 15 minutes per 450g depending how you like it cooked. Make some cuts into the meat and insert slices of garlic and rosemary sprigs. Rub the lamb with generous amounts of olive oil and season well.

Pre heat the oven to 230C (gas mark 8). Place the lamb in the roasting tin and add to the super hot oven for about 15-20 minutes then turn down to 200C (gas mark 6) for another 1.5hrs (or your calculation). Baste every so often.

Once done, take the meat out of the tin and place on a warm plate or board to rest. Drain the excess fat out of the tin and add the red win and stock and bubble away to deglaze and take up all the meat juices.

Serve with minted peas, seasonal veg and enjoy with your loved ones.
