Peanut Butter Cookies

These are so simple and quick to make but wow are they gorgeous. Why not add chocolate chips for a real treat!

50g Butter
50g Brown Sugar
50G Castor Sugar
1 medium egg
200g Peanut Butter
1tsp Honey
1tsp Baking Soda
1tsp Vanille extract
100g Plain Flour
50g Choc chips (optional)
Pre-heat the oven to 170 celcius/gas mark 5. Cream the butter & sugars together until light & fluffy. Then beat in the egg, honey & vanilla. Finally add the flour with the bicarb mixed in. It will be a stiff mixture. Place a tablespoon at a time onto a baking sheet (greased) and allow some space to spread.
Pop in the oven for about 10 minutes until golden. They will be soft still so leave them on the tray for a few minutes before you slide them off onto a cooler to harden up.
