Delicious Elderflower Cordial

There’s nothing like home made and nothing like the taste of Summer like that of Elderflower. This weekend is the perfect weekend to get out there to collect flower heads before they turn brown, making the very best of what mother nature provides. A gorgeous moment in time to savour.

This is a basic recipe and you can serve it as you like – some like simple lemon slices or you can add sparkling soda and mint leaves for a really special treat.

15 heads of elderflower
1.5 pints of boiling water
450g castor sugar
2 unwaxed lemons

Wash the flower heads and dry gently in a tea towel. Add to a large bowl with the sugar and poor over the boiling water. Steep overnight with the lemon peel. Once fully steeped, drain through a muslin cloth or strainer. Transfer to sterilised bottles and seal. Store in a cool place.
To use – simply dilute with still or sparkling water and add lemon slices, ice or possibly mint leaves. You could even add a splash to prosecco for a delicious Summer treat.
