Baked Cheesecake with Love

This is a delicious and deceptively easy cheesecake to bake…luxurious, special, decadent and plenty enough to share with as many people that you love as possible.

200g all butter shortbread biscuits smashed to small bits & crumbs
50g melted butter

675g cream cheese (full fat is essential here)
200g castor sugar
225ml double cream
2 tsp vanilla extract
1 tbsp custard powder
2 eggs

Pre heat the oven to 150c (130c fan), gas mark 3.

Crush the biscuits and stir in the melted butter and press into the bottom of a 9inch springform tin and place in the fridge.

Add all the ingredients to a large mixer and combine until a smooth mixture. You can also add to a large bowl and use a hand whisk.

Pour the mixture over the base and very carefully place in the centre of the oven and bake gently for an hour. It is cooked when there is a slight browning at the edge and the middle has a wobble. Turn off the oven and allow to cool in there for another hour. Then pull out and allow to finish cooling. Serve with fruit on top or simply sprinkle with icing sugar and serve cold. It will happily sit int he fridge for 24hours before you serve it if you ant to make ahead.
