This is a new discovery for us but is really delicious. Full of goodness and can be smartened up with a dollop of sour cream.
2 medium onions, chopped
2 medium potatoes, peeled and chopped
a good couple of handfuls of watercress (or land cress), washed and chopped
a litre of good vegetable stock
salt and pepper to taste
sour cream for garnish if you fancy
Simply saute the chopped onion and potato over a medium heat for about 10 minutes, stirring regularly and not allowing to brown. Add the hot stock and bring to a simmer for about 5 minutes. Add the watercress, roughly chopped and cover for another 5 minutes until your potato pieces are cooked through and soft. Whizz the soup up until smooth, either with a hand blender or blender. Add salt and pepper to taste at this stage. Perfect with warm soda bread and some sour cream.
