There is nothing better than creating your own Mulled Wine at Christmas. You can adapt the recipe to suit your tastes, but here is a fool proof method to start you off.
2 bottles of good red wine
1 orange studded with cloves (10-12)
5cm piece of fresh ginger, peeled
1 cinnamon stick
a glug of brandy to taste
125g of brown sugar (again to taste)
Juice of an orange
3 whole star anise (optional)
slices of orange or clementine
Add all the ingredients together in a large pan and over a low to medium heat, bring almost to the boil and stir until the sugar is dissolved. For a perfect infusion of tastes, allow to simmer for 30 minutes and serve.
