Coffee & Walnut Cupcakes
A delicious and perhaps more grown up version of a cupcake. Perfect picnic treat.
125g plain flour
125g soft brown sugar
125g soft butter
1 tsp baking powder
2 tsp coffee granules, mised with 1 tbs boiling water
150g icing sugar
1 tsp butter
2tsp coffee granules, mixed with 1 tbs boiling water
Pre heat an oven to 180C/gas mark 6/160 fan oven and prepare 12 cupcake cases in a cupcake tray. Beat the sugar and butter together until pale and soft. Slowly add the eggs, one at a time, beating until smooth. Combine the flour and baking powder together and add to the batter, folding carefully with a metal spoon. Now carefull add the cooled coffee mixture and 80g of the walnuts, chopped.
Spoon the mixture into the cases and bake for approximately 15-20 minutes or until they have become pale gold and springy on the top. Allow to cool completely. Beat together the ingredients for the icing and decorate the cooled cupcakes with the icing and remaining walnuts.
