Easiest Mince Pie Recipe Ever!
The mince pie recipe of the century. This is a Simply HQ favourite and has replaced all other methods for the last 3 years. No need to make perfect pastry, no pastry waste when it goes tough after re rolling, kids can get involved and the most delicious, melt in the mouth flavour you can imagine!
225g cold butter
350g plain flour
100g castor sugar
1 small free range egg
icing sugar to dust
Pre heat the oven to 190 or 170 fan (gas 6). Use a food processor or hand held whisk to bring together all the ingredients until it forms large lumps or one big lump. Bring together in your hands and knead gently until you have a smooth ball of dough. You can use immediately or chill until you need it.
Using some extra flour, roll out the dough and cut out larger circles for the bases and place into bun tray. There’s no need to line or grease the tray as the butter content in the dough will stop sticking problems. Add a teaspoon of mincemeat and the top with a small circle or holly leaf, stop or other festive shape. Bake in the oven for 15-20 minutes. Allow to cool slightly in the tray before using a palette knife to jimmy out and place on a cooling rack. You can bring together the left over dough again and again, re rolling as you go without a risk of tough pastry. This recipe should make about 18. NOTE: these freeze like a dream.
